To make curry masala powder, you will just need eight different types of spices. Usually, these spices are easily available in the kitchen. You don’t have to go store to get any ingredient to make this curry masala powder.

Ingredients:

  • Dry red chilies
  • Cardamom pods
  • Cinnamon stick
  • Coriander seeds
  • Cumin seeds
  • Fennel seeds
  • Whole cloves
  • Black peppercorns

Instruction:

Step 1: Heat the non-stick pan in low-medium flame.

Step 2: Now roast all the spices. Put four dry red chiles, four cardamom pods, one cinnamon stick, 4 tbsp coriander seeds, 2 tbsp cumin seeds, 2 tsp fennel seeds, half tsp whole cloves, and half tsp black peppercorns in the pan.

Step 3: Roast the spices for 2-3 minutes on a low flame. Keep stirring the spices to avoid burning.

Step 4: Grind the powder in a grinder or mortar and store it in a tight container.

To maintain the exotic aroma and flavor of the curry masala powder, store it in a tight jar. If you are regularly using it, make sure to close the lid tight to get the same flavor and aroma every time you use it.

This curry masala powder can also be made with readily available ingredients in your kitchen. The powder masala that you get by following this recipe suits all types of curry however, using it in chicken curry tastes heavenly.

Ingredients:

  • Turmeric
  • Bay leaves
  • Whole coriander
  • Whole cumin seed
  • Ground ginger
  • Whole White peppercorns
  • Chili flakes
  • Clove

Instruction:

Step 1: Heat the pan in medium-high flame.

Step 2: Turn the flame into low-medium. Add 1 tbsp turmeric, three bay leaves, 3 tbsp coriander, 2 tbsp cumin seed, 2 tsp ginger,1 tsp chili flakes, 1 tsp white peppercorns, and one clove when the pan is hot.

Step 3: Stir the spices for one minute.

Step 4: Reduce the flame to medium and continue stirring for another ten minutes. Roasting the spices make them more fragrant and tasty. But make sure you don’t burn it. You may roast the spices in low flame if the base of your pan is thin.

Step 5: Move the spices to a grinder and grind well to get curry masala powder.

If you are using ground spices, roast all the spices except bay leaves. When the curry masala powder is ready, you can transfer it to the container. And ensure to add 1 or 2 bay leaves when you make curry.

This curry masala recipe is flavorful and definitely gives spiciness to your dishes. Most curry powder has a mild taste, whereas this masala powder is hot. The spiciness in the curry powder masala comes because of red chili powder and yellow mustard seed.

Ingredient:

  • Coriander seeds
  • Cumin seeds
  • Fennel seeds
  • Fenugreek seeds
  • Black peppercorns
  • Yellow mustard seeds
  • Red chili peppers
  • Dry curry leaves
  • Turmeric
  • Ground ginger
  • Ground garlic powder
  • Salt
  • Ground cinnamon

Instruction:

Step 1: Heat the pan over medium flame.

Step 2: When the pan is hot roast all the spices. You will need one-fourth cup of coriander seeds, 4 tsp cumin seeds, 1 tbsp fennel seeds, 1 tsp fenugreek seeds, 1 tsp black peppercorns, 1 tsp yellow mustard seeds, four red dry chili peppers, four dry curry leaves, 2 tbsp turmeric, half tsp ginger, half tsp garlic powder, half tsp salt, and one-fourth tsp cinnamon.

Step 3: Let them roast for a few minutes. Be careful you don’t scorch them. Else they will taste bitter.

Step 4: Blend all the spices in the blender. You will get around a half cup of curry masala powder.

Ingredients:

  • Coriander
  • Cumin
  • Turmeric
  • Ground cinnamon
  • Cloves
  • Chilli powder
  • Spanish paprika

Instruction:

Step 1: Heat the pan and roast 1tsp cumin seeds, 1 tsp coriander seeds, and 1 clove for around 30 seconds. You may also use a cinnamon stick but ensures to roast it with other spices.  Roast in low-medium flame.

Step 2: When the roasted spices get cooled, add them to other spices. Stir them to combine.

Step 3: Grind spices in a grinder or use a mortar.

Step 4: Store the curry powder masala powder in an air-tight jar.

  • Smoke sweet paprika
  • Ground ginger
  • Pepper powder

Instruction:

Combine 2 tbsp coriander powder, 1 tbsp cumin powder, 1 tbsp turmeric powder, 1 tbsp cayenne mid or hot, 1tbsp smoked sweet paprika, half tsp ground ginger, and half tsp pepper powder. Give it a good mix.

Following this recipe, you will get general curry powder masala for seasoning. This recipe also requires ground spices, which make it easy to prepare.

  • Ground Cardamom
  • Ground coriander
  • Cumin powder
  • Dry mustard
  • Turmeric
  • Cayenne powder
  • Ground ginger
  • Ground black pepper

Instruction:

Combine 1 tbsp cardamom, 1 tbsp ground coriander, 2 tsp cumin powder, 1 tsp dry mustard, 1tsp turmeric, 1 tsp cayenne powder, half tsp ground ginger, and half tsp ground black pepper. Ensure to mix all the spices until they are well combined.
