Instruction To Prepare Aloo
Step 1:
You need to soak black channa overnight or at least for 6 hours. Make sure the black channa is completely covered with water.
Step 2:
Drain the water from the channa. Put the channa in the pressure cooker. Then add ½ tablespoon turmeric, salt, and water. You can add salt to potatoes as per your taste.
Step 3:
Pressure cook channa for 4 to 5 whistles.

Transfer black channa to the bowl.

Now you need to pressure cook potatoes. Put 10 potatoes in a pressure cooker and add 2 and a half cups of water. Pressure cook potatoes for 6 to 7 whistles. Stick knife in potatoes to check whether they are cook or not.

Your aloo and channa is ready. After that, you need to prepare cumin powder. You can also use ready-made cumin powder. However, preparing fresh cumin powder at home add flavor.
Step 7:
To prepare cumin powder, you need to dry roast 1 tablespoon of cumin seeds. Make sure you roast cumin seeds in low flame until they turn blackish.
Step 8:
Transfer roasted cumin seeds to mortar pestle to crush into a fine powder. Ensure that cumin seeds are crushed properly. Transfer the cumin powder into a small bowl.
Step 9:
Now, you need to prepare aloo. Peel the skin of boiled potatoes. Cut the potatoes roughly then put them in the bowl.

Mash potatoes using spoon or hand. If you are not using your hand, you need to big spoon for easy mash.

Add black channa to mashed potatoes. Give it a good mix. Better to use a hand to mix channa with potatoes.

- Lemon juice
- Green chili
- Coriander leaves
- Water
- Pani puri masala
- Black salt
Instructions To Prepare Pani For Pani Puri
Step 1:
You need to rinse coriander leaves and mint leaves to remove dirt from them.
Step 2:
Chop coriander leaves and mint leaves finely. You don’t have to be accurate while chopping as you have top grind them in upcoming steps.
Step 3:
You will need one green chili to make pani. Cut green chili and separate it on the plate.
Step 4:
Now you will need one lemon for pani. Cut the lemon into two halves. Squeeze lemon juice in the cup.
Step 5:
Get ready with all the ingredients to prepare pani. In this step, you will need a grinder.
Step 6:
Add chopped mint leaves, chopped coriander leaves, lemon juice, then grind all these ingredients until they turn into a paste.
