If you are starting to prepare your pickles at home, you should go for the mixed pickle. It can be made from vegetables and fruits and is a healthy yet flavorful addition to your eateries.

Super easy to make, the mixed achar is perfect during winter if you have the patience to try it. Also, you can have it with rotis or your regular dal bhaat. All in all, you can make mixed pickles in two different ways. One way is instant and perfect for small servings, while the other way is the process of patience.

Mixed Pickle #1

Mixed Achar Ingredients List

All the ingredients listed below are for the serving of one big jar.

  • Raw mangoes (one kg)
  • Carrots (five)
  • Green chilies (100 grams)
  • Garlic (25 cloves)
  • Ginger (100 grams)
  • Radish (three)
  • Peas (optional)
  • Cauliflower (optional)
  • Lemon (4 to 5 pieces)
  • Sugar (two tablespoons)
  • Salt (as per taste)
  • Turmeric powder (two tablespoons)
  • Red chili powder (four tablespoons)
  • Mustard oil (750 ml)
  • Fenugreek seeds (2 to 3 tablespoons)
  • Mustard seeds (a tablespoon)
  • Coriander seeds (four tablespoons – crushed and ground)
  • Panch Phoron – spice blend including fenugreek seed, nigella seed, cumin seed, black mustard seed, and fennel seed (four tablespoons)

Guide To Preparation

  • First, take your vegetables and mangoes, and wash them all thoroughly. Then chop your vegetables into thin slices and dice the mangoes. While at it, chop the garlic and ginger into small pieces.
  • Now, marinate all these in turmeric powder and red chili powder. Then, mix the lemons and sun-dry all the items for 5 to 6 hours.
  • Take three to four tablespoons of panch phoron and roast them lightly. After it, grind it into a fine powder.
  • Following it, take a large pan and heat the mustard oil. As the oil is heated, temper it with panch phoron, mustard seeds, and fenugreek seeds. After a while, add your vegetables and mangoes and cook until they turn soft and a little mushy.
  • Then, add sugar and salt (as per taste), and cook them well over two minutes.
  • Now, add the powdered panch phoron, coriander, and mustard seeds.
  • After it, all cools down, transfer this mixture to an airtight jar. Altogether, you can store it in the refrigerator or leave it in the sun for a few hours.

Tips For This Achar (Pickle)

  • While adding mangoes to your pickle, use green unripe mangoes with thin skin. It is better to use rock-hard ones. However, if you have a thick mango peel, discard the skin and do not add it to your pickle.
  • Always contain pickles in an airtight container, as moisture or excess water seeping in will spoil your pickle.
  • Make full use of sunlight. Keep your pickle in sunlight for good three to four hours a day.

  • Three bowls of mixed vegetables (cauliflower, peas, carrots, radish, and green beans)
  • Lemons (two)
  • Green chilies (3 to 4 pieces)
  • Ginger (one)
  • Garlic (one clove)
  • Panch phoron / pickle masala (two tablespoons)
  • Turmeric powder (half tablespoon)
  • Salt (as per taste)
  • Mustard oil (2 to 3 tablespoons)
  • Vinegar (3 to 4 tablespoons)

Guide To Preparation

  • Initially, wash and clean all your vegetables and chop them into dice. Well, you can also make long thin slices as per your preference. Also, dice your lemons, green chilies, and ginger julienne.
  • Now, take some water in a large pan and add turmeric powder and a few pinches of salt. As the water starts shimmering, add your chopped vegetables and cook them until they are tender and soft.
  • Then, strain the vegetables and dry off the excess water. Then, in a big bowl, take the vegetables and add lemons, chilies, and ginger to mix them all.
  • Add panch phoron or pickle masala, vinegar, and salt.
  • Lastly, add mustard oil and mix them all evenly. Let it sit for two hours before serving.

Tips For This Achar (Pickle)

  • You can add any vegetables of your preference to this pickle bowl.
  • Do not overcook your vegetables in water, as they can lose all their flavor.
  • Remove all the excess water without leaving anything behind, as any excess water will spoil your pickle early.
  • To see if your vegetables are perfectly cooked, look at their color. Perfectly cooked vegetables will turn slightly yellow.
  • If you are using readymade pickle masala, check the packet to see if it contains salt. If they have salt, do not add extra salt on your own.
