Spicy Chicken Masala Recipe: Marinating chicken
Ingredients:
- 1 kg chicken
- Salt
- Turmeric powder
- Curd
- Garam masala
- Red chili powder
- Ginger garlic paste
Instructions:
- Clean the chicken in the colander under the running water.
- Transfer the chicken to the bowl and add one teaspoon turmeric powder, two tablespoon curd, half teaspoon garam masala, half teaspoon ginger-garlic paste, half teaspoon red chili powder, and salt as per your taste.
- Coat each piece of chicken with spices. Use your hand to massage the pieces.
- Cover the chicken with a lid and allow it to rest for an hour at room temperature.
After an hour, you can start preparing the spicy chicken masala.
Spicy Chicken Masala Recipe
Ingredients:
- Oil- 2 tbsp
- Bay leaf- 1
- Green cardamom- 2
- Clove-3
- Cinnamon stick- 1 inch
- Onion- 1 medium-sized
- Ginger-garlic paste- 1 tsp
- Red chili powder- 1 tsp
- Green chili- 1
- Tomato puree- half cup
- Garam masala– half tsp
- Salt- half tsp
- Coriander leaves
Instructions:
Step 1:
Every recipe starts with vegetable chopping, so you need to start by chopping green chili, coriander leaves, and onion. Chop them finely and put them aside for later use.
Step 2:
Tomato puree is very important in this spicy chicken masala recipe. For half cup of tomato puree, you will need 3 medium-sized tomatoes. Create gashes on the tomatoes and put them in the boiling water. Let it cook for 2 minutes. Remove the skin and then blend the tomatoes. Transfer the tomato puree to the bowl.
You will need it later in the recipe.
Step 3:
Add two tablespoons of oil to the pan and heat it on medium-low flame for a minute. You can choose to cook in a pan or pot. It totally depends on you. If you are using a pan, make sure you are using one with good depth as that you don’t have any problem stirring.
Step 4:
After a minute, you need to roast whole spices. In oil, add a one-inch cinnamon stick, two green cardamoms, three cloves, and one bay leaf. Roast the whole spices on low flame and keep stirring. You have to roast them for a minute or two until they release the aroma.
Step 5:
Next, you have to add finely chopped green chili and onion. Fry them until the onion become transparent on a low medium flame. Keep stirring in the interval so that you don’t burn it.
Step 6:
Then add one teaspoon ginger-garlic paste. Stir and fry it until the raw smell of ginger-garlic paste vanishes.
Step 7:
After then, you need to add the tomato puree, you just made. Mix it well with all the spices.
Step 8:
After a minute, you can add 1 teaspoon salt, one teaspoon red chili powder, and half a teaspoon garam masala. Mix it well until the spice leaves the pan. Make sure you are working in medium-low flame. Don’t increase the flame, you might just burn the spices. And also, ensure that you keep stirring the spices in intervals.
Step 9:
Now it’s time to add the marinated chicken. Mix the chicken pieces with spices well. Keep stirring for 7-8 minutes to coat each chicken piece with masala. You can increase the flame to medium while stirring and coating the chicken.
Step 10:
Cover the pan with a lid and allow the chicken the cook for about 10 minutes. You want your chicken to cook thoroughly, so turn flame low. Stir the chicken in the interval.
Step 11:
Add chopped coriander leaves and give a stir. Cover the pan and let the chicken on the low medium flame. You need to cook it until the chicken becomes soft and tender.
Step 10:
Add half a cup of water. You don’t have to put a lot of water because chicken releases moisture while cooking. Put make sure you keep stirring the chicken.
